I found the sword fight at the end of the old Macbeth movie was pretty cool. You can see it on Youtube but I'm too lazy to post a link

I fourth all the Star Wars ones.
And to add to that, Darth Maul vs. Obi-Wan Kenobi and Qui-Gon Jinn, one of the two reasons to watch Episode 1.

Also, any fight in Afro Samurai Resurrection.
